What you need for Pikelets
1 cup champion standard flour 1/4 cup sugar
1 teaspoon Edmonds baking power 3/4 cup milk
1/4 teaspoon salt butter to grease
1 egg
sift flour, baking power and salt into a bowl. In another bowl beat egg and sugar until thick. Add egg mixture and milk to flour. Mix with a wooden spoon until ingredients are just combined. Lightly grease a heavy-based frying pan with butter. heat pan. Drop tablespoonfuls of mixture into hot pan. When bubbles appear and start to burst on top surface, turn pikelets over. Cook other side for about 1 minute until golden.
